frosted pumpkin bars

Bake: 25 mins + cooling

Ingredients:

Yield: 2 dozen

    • 1 can (15 oz) solid pack pumpkin
    • 2 cups sugar
    • 4 eggs
    • 1/2 cup canola oil
    • 2 cups biscuit/baking mix
    • 2 tsp ground cinnamon
    • 1/2 cup raisins

Frosting:

    • 1 package (3 oz) cream cheese, softened
    • 1/3 cup butter, softened
    • 1 Tbsp 2% milk
    • 1 tsp vanilla extract
    • 2 cup powdered sugar

Directions:

    1. Beat pumpkin, sugar, eggs, and oil in a large bowl. Combine biscuit mix and cinnamon; gradually add to pumpkin mixture and mix well. Stir in raisins.
    2. Pour into a greased 15X10 baking pan. Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
    3. Meanwhile, in a large bowl, beat cream cheese and butter until fluffy. Add milk and vanilla. Gradually beat in powdered sugar until smooth.
    4. Spread over bars. Store in the refrigerator.
